12 cocktail bocconcini, drained
A drizzle, olive oil
To taste, freshly ground pepper
12 9.5-cm (3.5-inch) bamboo skewers
24 medium strawberries, hulled
6 slices of serrano ham, halved lengthwise
To taste, balsamic vinegar reduction
1. In a small bowl, combine bocconcini with olive oil and pepper.
2. Thread two strawberries, one bocconcini, and a half-slice of serrano ham folded accordion style onto each skewer.
3. Place brochettes on a serving platter and drizzle with balsamic vinegar reduction.
Pour 60 mL (¼ cup) of balsamic vinegar in a small saucepan with 15 mL (1 tbsp.) of sugar and cook over medium-low heat until vinegar reduces by at least half. Set a room temperature a minimum of
15 minutes before serving.
You can replace the serrano ham with prosciutto.
